PRODUCTION
Harvesting the olives is the first step. Olives are collected in the nets beneath the olive trees and are immediately brought to the crusher. Crushing is the second step: the crusher works 24 hours a day during the harvesting season (between November and February) for producing the best quality, keeping inside the oil all its aroma and flavors. Tasting and Selecting is the third step: our panel of experts is tasting each single lot, deciding which one deserves to be packed or blended with other oils to improve the customers acceptance, and which one instead needs to be refined in our own refinery. Refining is the most important step for producing the pure olive oil Nostr’ Olivo, it is a phisical process that ensures to the oil its light color and mild taste. Packing is the final operation: under a strictly controlled process, all the oils are packed in bottles and tins tru a completely authomated procedure. All Nostr’Olivo products are followed and checked in all step, from oil selecting and tasting to bottling and shipping, by a pool of experts. All the phases take place in the original plant of Spoleto, in the centre of Umbria, the green heart of Italy.
